How to make it

Sift 1 teaspoon into a bowl. Add about 2 oz of water at 160–175°F and whisk until smooth and foamy. Add a little more water, or pour over warm milk for a latte.

Water that is too hot turns matcha bitter, so let the kettle rest a minute after it boils.
